- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 5 tablespoons unsalted butter, chilled and cut into small pieces
- 1 cup buttermilk (can be low-fat) or 3/4 cup of water
Creamed Chicken

- 1 (10.5 ounce) cans 98% fat free cream of chicken soup
- 1 can chicken broth
- 3 large skinless boneless chicken breasts
Directions:
- FOR THE BISCUTIS: Heat oven to 400° F. Line a baking sheet with parchment paper or aluminum foil.
- In a large bowl, combine the flour, baking powder, salt, and baking soda. Using a pastry blender, 2 knives held crisscross fashion, or your fingertips, add the butter to the flour mixture and mix until crumbly.
- Add the buttermilk (or water) and, with a wooden spoon, stir until combined. The dough should be very sticky.
- Using the spoon or your fingertips, drop heaping tablespoons of the dough onto the baking sheet.
- Bake until lightly golden and a toothpick inserted in the center comes out clean, 12 to 15 minutes. Serve hot.
- FOR THE CREAMED CHICKEN:
- In a big pot place chicken, chicken broth, seasonings of choice and enough water to cover the chicken. On the stove top, boil the chicken until chicken is done and no longer pink on the inside. Transfer the chicken on a plate and set aside.
- Stir the cream of chicken soup, and the packet of gravy mix in with the the liquid you boiled the chicken in (if more than 1 1/2-2 cups of liquid carefully ladle out the extra and discard or freeze for later use). Heat through on medium-high heat until it begins to simmer and thickens up.
- Meanwhile, shred your chicken with 2 forks, If you have a kitchenaid, you can shred it using the mixer attachment (which is what I did).
- Transfer chicken back into the pot with the liquid ingredients and blend well.
- Split biscuit in half or tear up on a plate and add 1/8th of the mixture (about 2/3 cup) on top of the biscuit,, enjoy!
