- 2 cup couscous
- 3 cloves of garlic
- 1 red pepper
- 1 ½ cups frozen mixed vegetables
- 1 tblsp extra virgin olive oil
- 1 tblsp butter
- 2 cups beef broth low sodium
- Pinch of salt
- Pinch of pepper
- 2 tsp pepper flakes (to taste)
Directions:
- In a skillet, heat up the olive oil and butter over medium high heat.
- Add the diced red peppers and cook for 3-5 minutes (peppers should be slightly tender).
- Add the minced garlic and continue to cook for an additional 2 minutes.
- Stir in the mixed vegetables and cook until they are no longer frozen and warm
- Add the beef broth, seasonings and the couscous. Stirring constantly for 2 minutes or until the water
- comes to a boil and the couscous begins to absorb the liquid
- Cover and take off the heat and let sit for 5-6 minutes. The couscous should be about double in size
- Fluff with fork, serve, and enjoy =)
