Preheat oven to 350 degrees
Ingredients:
- 1/3 cup Reduced fat Parmesan cheese
- 3 tbls flour
- ½ tsp Baking powder
- ¼ tsp salt
- 1 cup shredded zucchini
- ¼ cup diced orange pepper
- 26 slices turkey pepperoni
- 2 eggs
- ¼ cup tomato sauce
Directions:
Preheat oven to 350 degrees
- In a medium bowl, combine Parmesan cheese, flour, baking powder and salt.
- Stir in shredded zucchini, eggs and tomato sauce.
- Finely dice the bell pepper and pepperoni. Stir these into the batter along with the Mozzarella.
- Place equal amounts of the batter into a pop machine or mini muffin tin, rounding the tops. Close and bake 6-7 minutes. Makes 20-22 pops. If using a muffin tin, bake approximately 25 minutes. Makes 16.
